AUS Raclette: Makes the perfect social event!

Fromart Raclette is a soft to semi-hard cheese with a light reddish brown rind.
The cheese itself is a bright, farmhouse butter in colour and the paste is firm with no holes evident.
The bouquet is fresh and fragrant with shades of crème caramel and roasted hazelnuts.
When eaten cold its texture in the mouth is smooth and supple. When heated, the cheese displays a delightful gooey consistency.
Although not a sharp cheese, Raclette is full of flavour, with a notable piquancy that suits it to a variety of food combinations.
On the palate, you will discover a complexity of tastes beginning with sweet cream and developing into fruitiness, along with a faint acidic zest. At the finish, the flavour is persistent and savoury, showing a balanced saline tang.
Food: Traditionally, Raclette is served as a hearty family dinner or, like fondue, as an enjoyable communal meal. Portions of the cheese are heated until the surface starts to melt; the melted layer is then scraped* onto plates and served with boiled new potatoes, pickles and an assortment of other vegetables.
Drinks: You will particularly enjoy Raclette with any of the following white wine varieties: semillon, riesling, sauvignon blanc, or pinot gris. Or try with a full-bodied beer - such as Coopers Sparkling Ale.

Fontalino is a semi soft Swiss cows milk cheese that is the Swiss Version of the French Fontal and the Italian Fontina. Mild and creamy, this pasteurized cow's milk cheese is semi-soft and elastic, sweet, and very meltable, its best use is for cooking, where it will form a dense layer of melted gooeyness.

SWISS Appenzell: Unique and spicy

FROMART APPENZELL is a Swiss cheese made from unpasteurised (raw) milk.

The cheese continues a seven century tradition for the appellation APPENZELL. Part of the charm of the style is the use of a unique herbal brine during maturation that enhances and intensifies the inherent qualities of the cheese.
Food: Feature APPENZELL on a cheese platter along with other sharp cheeses, water crackers, dried pears, slices of Granny Smith apples and walnuts or pickled onions, mustard pickles or chutney.

Drinks: The robustness of Appenzell suits it to flavourful red wines. Try it with a Coonawarra Cabernet Sauvignon or a McLaren Vale Shiraz. Alternatively, if part of a dessert course, serve with a Rutherglen muscat.

SWISS dAlpage: Pure alpine passion!

A strongly flavoured, raw (unpasteurised) milk cheese from the Swiss Alps. The cheese is regularly smeared with a herbal brine, which creates the distinctive “stinky” rind and considerable complexity of flavour and aroma. The rind can be removed before serving, as the aroma can be distracting to those not used to this degree of pungency.
In appearance, the rind is a ruddy orange colour, while the interior is a dense, pale buttery yellow; with infrequent holes the diameter of chickpeas.
The bouquet is deeply piquant and aromatic to the nose, showing top notes of meadow grasses and alpine herbs.
In the mouth, the texture is smooth and slightly granular, turning creamy when chewed.
Flavours are rich and tangy, displaying a mixture of honey, caramel, walnuts, herbs, and a faint tang of salt. The cheese finishes with a savoury, lingering aftertaste. These aromas and flavours will intensify as the cheese ages.
Serve with an Oloroso sherry, a Yarra Valley pinot noir, a Margaret River shiraz, or a vintage port.

SWISS Specialty: The SNAKE BITE

The Snake Bite is the strongest cheese in the Fromart portfolio.
An aged Swiss Alpine cheese, the Snake Bite is made from raw (unpasteurised) milk produced by Swiss Brown cattle in Northern Switzerland.
In our maturation room, we regularly “wash” the Snake Bite with a special brine solution. This “washing” enhances its distinctive aromas and flavours and gives the rind its ruddy, onion skin colour.
In appearance, the cheese is a pale buttercup yellow with random holes ranging from lentil to green pea in size.
You will discover notes of sherry, honey, walnuts and butterscotch in the strong and pungent bouquet.
In the mouth, its texture is quite firm, almost hard, and each mouthful delivers the slight crunch associated with classic aged cheeses.
The cheese displays full-bodied flavours that are sharp, spicy, and savoury across the palate. Its intense and enduring aftertaste has a subtle saltiness that complements the overall impressions of strength and complexity.
Snake Bite is delightful on its own, or served with other strong cheeses, like, for example, an aged English Cheddar. It will add bite to any gratin dish or simply grilled on toast makes a fine supper snack.
A robust cheese like this demands a substantial wine. Try it with Chianti, a Rutherglen shiraz or a full-bodied, wooded chardonnay from McLaren Vale.

AUS Devils Foot: rustic and spicy

WINS GOLD AT BRISBANE CHEESE AWARDS 2010!

Very smooth in appearance, the Devils Foot displays striking buttery, daffodil hues.
While noticeably aromatic, the cheese is not in the “smelly” category. Instead, its sweet and complex bouquet offers notes of clotted cream, buttermilk, marzipan and caramel.
In the mouth, its silky chewiness is similar to that of fudge, while the substantial flavours will remind you of butter, hazelnuts and light toffee. At the finish, the slight sharpness of the cheese shows a degree of firmness, along with a mild salty tang. The aftertaste is savoury and persistent.
Devils Foot will lend itself as a delicious complement to any cheese platter. Also, as it is a great melting cheese, it will enhance most cooked cheese dishes – especially fondue.
Try it with a rosé, a pinot grigio or, at the end of a meal, with a liqueur muscat.

SWISS Mont Soleil: Relax and enjoy!

Mont-Soleil is a raw (unpasteurised) cow milk cheese from the Swiss alpine town of St Imier. Milk for the cheese comes from Swiss Brown herds fed only on alpine pastures.
The cheese has a light tawny orange rind, is of medium density without holes, and is a pale jonquil yellow in colour.
Quite aromatic, it displays delicate creamy and buttery characters on the nose.
Its flavours are subtle and will remind you at the same time of sweetness, nuttiness and herbaceousness. Imagine a tantalizing blend of caramel and roast macadamias along with a sprinkling of mixed green herbs.
In the mouth it develops a delightful elastic smoothness without any graininess and the aftertaste is firm, enhanced by the faintest saltiness.
Mont Soleil is moreish when eaten without any accompaniment whatsoever. Yet it can also feature on a cheese platter served with dry biscuits, wafer-thin slices of fresh apples and pears, and bunches of muscatel grapes.

Try serving with champagne, a New Zealand sauvignon blanc or a German lager.

Swiss Gruyere Extra Mature is an aged raw cow’s milk cheese from the North Western part of Switzerland.
Gruyere Extra Mature has an aromatic bouquet and there are subtle scents of cashew nuts and alpine herbs. In the mouth the cheese is smooth, chewy and supple in texture with a slight crunchiness. Its flavour is mature and tangy yet distinctively sweet. The aftertaste is savoury and mildly sharp.

Swiss Schabziger/Sap Sago: Absolutely unique!

THIS CHEESE CAN ONLY BE ORDERED IN COMBINATION WITH OTHER CHEESES!

Sap Sago has been made in the Swiss canton of Glarus since the 8th century AD. It is a hard cheese made from skimmed cows’ milk and is matured for at least five months.

Sap Sago is virtually fat-free and not unlike hard Italian cheeses in texture. It is at its best when grated and is mostly used as an accompaniment or seasoning for other dishes.

Its unique pale pastel lime colour comes from addition of the alpine herb, Blue Fenugreek, a type of blue clover. The Blue Fenugreek also contributes a distinct aroma and flavour, similar to the fenugreek seeds found in many spice racks.

The bouquet of Sap Sago is highly aromatic and pungent; the initial sharpness is nicely balanced by spicy notes of alpine herbs and grasses.

In the mouth the cheese is quite complex, displaying elements of aged cheese piquancy along with hints of dried herbs and meadow flowers. The aftertaste is long and savoury with a noticeably salty tang.

Usage: use wherever you would add sharp grated cheese.

Add as a flavour enhancer to egg dishes, cream sauces, and risotto.

Mix grated Sap Sago with its weight in softened butter and use in cheese-based hors d’oeuvres, spread over toast, or melt over freshly steamed asparagus spears or baby new potatoes in their jackets.

Suggested wines: White - Pinot Grigio, Riesling, Viognier, Champagne. Red – Chianti, Shiraz, Dry Sherry.

SWISS Jura Mountain: A great Gruyere style!

Jura Mountain cheese is an aged raw cow’s milk cheese from the Swiss mountain region of Jura, produced in wheels of 10 kilograms.
The rind is rusty orange in colour. Inside, the cheese is dense with deep lemony butter hues.
Jura has a mildly aromatic bouquet not unlike Gruyere and there are subtle scents of cashew nuts and alpine herbs.
In the mouth the cheese is smooth, chewy and supple in texture with a slight crunchiness. Its flavour is mature but not overpowering and tangy yet distinctively sweet, somewhat reminiscent of butterscotch. The aftertaste is savoury and mildly sharp.
Try with an elegant semillon, a pinot noir or a shiraz. The flavours will also happily complement bottle-conditioned sparkling ales or a dry apple cider.

SWISS Gruyere***: A MUST for every raw cheese lover!

The FROMART GRUYERE *** is a raw (unpasteurised) cheese from the milk of Swiss Brown cows.
The rind displays dusty ochre hues. As the cheese matures, the rind develops a distinct “whiff”, and, although the rind is edible, we recommend that you remove it before serving.
In appearance, the Gruyere has the colour of a light cultured butter and the paste is dense with no holes apparent.
The bouquet is robust yet surprisingly sweet. It displays characteristic Gruyere nuttiness along with creaminess, aromas of delicate toffee and some fruity overtones.
Texture in the mouth is supple to firm and shows a slight granular crunchiness. With ageing this texture can border on crumbly.
The Gruyere’s full-bodied flavours are rich, complex and intense but not overwhelming. There are hints of caramel, butter, fruits, roast almonds, mushrooms and a little earthiness. The finish is both sharp and sweet at the same time and the aftertaste is deliciously persistent.
Serve with dry biscuits, walnuts in the shell, dried apricots, finely pared fresh apples and pears.
Fromart Gruyere is a fine cooking cheese and its distinctive character will enhance dishes such as fondues, omelettes and quiches.
It goes well with substantial dry red and white wines. Try with a Shiraz, a Rioja, an oaked Chardonnay or a Riesling.
